Our origin

Where the mountain does the hard work

Huila brings together three conditions almost nowhere else has at once: volcanic soils, natural shade from the mountain range, and cold nights that force the cherry to ripen slowly. That extra time is, quite literally, the flavour.

Ours is a family farm. Karen leads relationships with cafés, roasters and companies; Fabian handles growing, fermentation and drying. There are no middlemen between the plot and your warehouse.

    Planting

    Seed selected in the nursery and transplanted to the plot according to variety.

    Harvest

    Manual, selective picking: only cherry at its exact point of ripeness.

    Fermentation

    Controlled tank fermentation, measuring time, pH and temperature for every lot.

    Drying

    Slow shade drying until the beans reach 10–11 % moisture.

    Roasting

    A roast profile designed per variety, roasted to order and never in advance.

    Cupping and quality control before packing and shipping to your city.
